Angus Beef - Aberdeen-Angus is the original name of the breed as developed in Scotland. Angus cattle are solid black cattle, although white may appear on the udder. They are hardy, undemanding, adaptable, mature at around two years of age, and have a high carcass yield with marbled meat, which is prized by many for the flavour that comes from the intramuscular fat when cooked.
Kobe Beef - Kobe beef is beef from a Wagyu cow. It is renowned for its flavor, tenderness, and fatty well-marbled texture. These qualities are a result of their excellent genetic characteristics. Wagyu cows are raised all over the world but the meat can only be called Kobe beef if slaughtered in Kobe, Japan.
Wagyu Beef - The meat from Wagyu cattle are known world wide for marbling characteristics, increased eating quality through a naturally enhanced flavor, tenderness and juiciness. The increased marbling improves the ratio of monounsaturated fats to polysaturated fats.
Hereford Prime - Is Australia’s largest independent beef brand. The brand provides the meat of the Hereford breed grown in Victoria and South Australia. The cattle are pasture fed and hormonal growth promotent free.
Grainge Beef - A brand of meat where the cattle are grain fed for 100 days and are British/Euro cross and raised free of artificial growth agents or stimulants.
Nolan Beef - The top-line Nolan Meats Private Selection is a high quality yearling beef up to 18 months old, grain fed from AUS-Meat registered feedlots.
Grain Fed Beef - Cattle (and lamb) that are fed grain products. This can be the only form of food or additional to grazing. Meat products that state they are grain fed does not necessarily mean the animals have been Lot Fed.
Lot Fed Beef - Cattle that are confined to a yard area with watering and feeding facilities where cattle are completely hand or mechanically fed for the purpose of production.
MSA Beef - Meat Standards Australia™ (MSA) is a beef grading program that labels beef with a guaranteed grade and recommended cooking method to identify beef eating quality according to consumers’ perceptions.
Bangalow Pork - Bangalow is an area in Bryon Bay, New South Wales, Australia known for producing exceptional quality pork from rarer breeds. Several breeds of pig are farmed in the area, many by the Free Range method. Breeds include the Berkshire and the Black pig.
Suckling Pig - Is a young pig that has only fed on its mother's milk. The young pig is killed between the ages of two to six weeks and traditionally roasted. The flesh is pale and tender and roasting produces a crispy skin (crackilings) that are highly valued. The texture is somewhat gelatinous due to the amount of collagen in the young pig.
Illabo Lamb - Illabo is in the South West Slopes of New South Wales. Illabo's main industry is agriculture and produces prime lambs known for their exceptional flavour.
Mandalong Lamb - A brand of Grain Fed sheep raised near Tamworth in New South Wales, Australia.
Hormone Growth Promotent Free -In many factory farming operations antibiotics, vitamins, hormones, and other supplements are preemptively administered to prevent potential spread of disease and encourage growth. Because these used as a preventative measure, many consumers are worried about the animals are breeding antibiotic resistant strains of various bacteria ("superbugs"). Other consumers are concerned that the additional supplements and hormones are in the meat of the animal and therefore being consumed by them unnecessarily, again creating a resistance to bacteria.
