The 2011 Sausage King Competition

   

AMIC represents the independent butcher shops throughout Australia and is the organizer of the annual Sausage King event. This is a serious competition where members enter their special sausage formulations in six different categories to be judged in regional heats to predetermined criteria. 

The competition starts off at a regional level across Australia, before moving to the six state finals, then culminating in a National Competition. The winners will compete in the National Final in Melbourne in February 2012.

 

There are six categories of sausages so there is something to suit every palate.

1. Traditional Australian
Sausages must be made of beef and/or lamb and/or pork, plus meal (optional) spices and/or flavourings and water. They must not contain any additional ingredients such as tomato. 

2. Australian Lamb/Open Class
Sausages must be made of lamb and can be highly flavoured and may contain additives e.g. Lamb with rosemary and sundried tomato. Additives such as corn, tomato, apple, cheese are permitted.

   


3. Traditional Australian Pork
Sausages must be made of pork and meal. The only additives allowable are spices and/or flavourings. Additives such as corn, nuts, apple etc are not allowed. Entries must not include bratwurst, Italian traditional and other continental type sausages. 

4. Poultry
Sausages can be made of poultry products and can be highly flavoured and may contain additives e.g. Turkey with onion and fresh sage. Additives such as corn, tomato, apple, cheese are permitted.

   

5. Continental
Sausages include bratwurst, Italian traditional, chorizos and other continental type sausages. They can be made of beef and/or lamb and/or Pork and can be highly flavoured and spiced e.g. Italian pork with spices and garlic.

6. Gourmet/Open Class
Sausages can be made of, beef, lamb, pork or game meats and can be highly flavoured, e.g. Pork with apple. Additives such as corn, tomato, cheese are permitted.

Most states have completed their State Competitions.
